The PERFECT textured gingerbread cookies!! I think next time I would either omit the salt or use unsalted butter. Both made the cookies a tad too salty for my liking. But these truly were so yummy!!!

These were wonderful, however, I did not use all the crumble as it was too much and I felt it would over power the apple filling. I put enough crumble to make a good thick base crust, baked that as directed, pulled it out and let it cool for 5 minutes as I have had filling pour through the base when hot in the past. Then I poured the filling over the crust and just put enough crust to lightly cover the whole thing then baked as directed. Very good recipe! Thank you!

Hmm. I’m not sure, I’ve never made this big of a batch before so perhaps that’s part of the issue but I am not sure why it would matter. These cookies should be soft in the centers with crispy edges, but they should not be ‘super droopy’ so I am not sure what may have gone wrong
