The only one that doesn’t increase is the 1 tbls of sugar that gets added to the cinnamon to roll them in. So instead of 1tbls use 3 tbls of sugar with the remaining 3 tbls of cinnamon.

Example: I made enough for 36 cookies but the instructions say to make 12 balls. The cinnamon quantity was off so I have no idea how they will taste. I’m sure it will work out but darn confusing.

I made a double batch for a get together with friends and they were a hit! This was my first time making snickerdoodles and I loved them, they turned out perfectly – soft, chewy, and cinnamony 🙂 I forgot to add the cinnamon to the dough until the end but it swirled in nicely and reminded me of cinnamon toast crunch cereal (in looks and taste, too!). Thanks for the great recipe Emma – I plan to make these again for a cottage trip next weekend!

If you want to make your own Brown Sugar, just mix a little molasses into granulated sugar. That’s really all it is. And you can use the internet to do measurement conversions really easily. I’ve had to do that for recipes that use standards outside of US standards.
